- Place your eggs [chicken, duck or quail] in a medium to large saucepan and cover with water.
- Bring to Boil.
- Once the water begins to boil, remove from heat and place on a non-conductive surface and allow to rest for 12 minutes in hot water.
- Drain water and with lid on, shake pan vigorously to crack eggs. [this will allow heat to escape and the egg whites not to become rubbery]
- Immediately plunge into ice bath for 12 minutes!
- Enjoy your eggs…you deserve it!
